When ECCO FEI World Championships 2022 pays a visit to Herning from August 4-12, we will open our doors as a classic dinner restaurant.

In the evening, we will open a unique pop-up restaurant with Martin Hylleborg as guest chef. Martin Hylleborg is the former co-owner and chef at Restaurant Rebel and he was trained at the Michelin restaurant Ensemble in Copenhagen.

Evening menu

Evening menu, choose from 9 dishes.

  • 2 dishes 60 euro
  • 3 dishes 80 euro.
  • Snacks 25 euro.
  • The house’s organic wine menu
  • Organic Sommelier special wine menu, inkl. welcome bubbles , snacks and water

Starter

  • Mushroom ravioli with creamy mushroom sauce of dried Karl Johan and fried mushrooms with parsley and garlic (vegetarian)
  • Cold-smoked salmon with crushed peas, garden herbs, chlorophyll and granny dressing
  • Beef tartare with pickled currants, herb mayo, mustard with capers, crispy malt crumbs and cress

Main

  • Risotto with tomatoes, spinach, parmesan and pickled onions from the garden (vegetarian)
  • Striploin with red wine glaze and marrow, pickled beets and celeriac
  • Fried monkfish with browned butter and soy/ginger, chives and carrot purée

Dessert

  • Strawberry ice cream with lemon cream and blackberries in caramelized elderflower
  • Gateau Marcel with raspberries and port wine syrup
  • Vanilla ice cream with white chocolate and caviar
